Pasta and Lentils

I got home fairly late tonight after an exhausting day and I made this pasta lentil dish. Not only was it quick and easy, it is also healthy. So, I thought I would share it. Abby and Sam loved it and so did Charles and I.

Quick Pasta and Lentils

1/2 onion chopped
3 garlic cloves
2 tablespoons olive oil
1 can lentil soup (I used Campbell's condensed lentil soup)
1 can chopped tomatoes
1 cup chopped spinach (I did not even thaw it)
16 oz. pasta (we used pasta shells - Abby's favorite)
salt
pepper
2 tablespoons parmesan (we used a whole cup)

Brown onion and garlic. Stir in lentil soup, and tomatoes. Bring to a boil. Stir in (frozen) spinach, salt and pepper. Simmer. Cook pasta and add to sauce. Top with parmesan. That's it!
